Somewhere between walking into the kitchen to make dinner and finding the pan to cook it in I completely changed my mind about what we were going to eat. I had planned to make frittata with lox, but wasn't really in the mood. Instead I decided to try my hand at potato pancakes.
I'd never made a potato pancake before. I'd never read a recipe for one. But, I've eaten enough of then to figure that I had a pretty good idea. So I grated two potatoes, added a couple of eggs, two tablespoons of flour, and mixed it all together.
The batter looked okay in the bowl, but the finished product was too eggy. Also, I forgot to add an onion. However, topped with lox and served with tomato, cucumber and chives, dinner was still rather yummy.
Next time I make them, I am going to use the following recipe, which still hasn't been tested, but got the approval from my mother-in-law.

Okay Erin, So you know I have been reading Barbara Kingsolver's Animal, Vegetable, Miracle and I’m trying to eat more locally, responsibly, and healthfully. Since this was the first Saturday I was home in quite some time, I went to the local farmers market bright and early. I bought a variety of lettuces, beets, radishes, basil, chives, bok choy, local cheeses (feta and fresh mozzarella), and tomatoes (obviously started inside). I'm open to any recipe suggestions (so far I’ve eaten a lot of caprice salad) but mostly I don’t know what to do with the bok choy, and maybe something with the radishes. Thanks, Colleen.
Sounds like you got an excellent assortment of veggies. Here are some suggestions:
* I like to braised bok choy with some garlic in chicken stock. This is a great accompaniment to sesame tuna or salmon with wasabi vinaigrette
* Radishes are nice quartered and sautéed with a little butter, salt, and chives. This goes unexpectedly well with scrambled eggs.
* You can also make a simple salad if radishes with carrots and raisins.
